Fried Rice

Ingredients
- Jasmin rice (cooked, overnight in the fridge)
- Oil (a lot)
- Eggs (beaten)
- Veggies (anything, as long as non-soggy types)
- Protein (any, bacon is preferred!)
- Aromatics (green onion, onion, sesame, etc.) and/or herbs
- Extra options like kimchi
Instruction
- Heat oil in a medium-high heat in a wok, caramelizing onion
- Add the rice and break it down
- Add finely chopped veggies and protein, which should be cooked in a separate pan or wok
- Add the eggs, drizzle over the rice mixture, and santee again to mix evenly
- Season with soy sauce plus other optional seasonings such as sesame oil or kimchee
- Sprinkle fresh chopped scallion on top and serve
Notes
- The texture of the rice improves if it is cooked and refrigerated overnight, as water evaporated
- A BIG wok and a spatula are necessary tools
