Fried Rice

Ingredients

  • Jasmin rice (cooked, overnight in the fridge)
  • Oil (a lot)
  • Eggs (beaten)
  • Veggies (anything, as long as non-soggy types)
  • Protein (any, bacon is preferred!)
  • Aromatics (green onion, onion, sesame, etc.) and/or herbs
  • Extra options like kimchi

Instruction

  1. Heat oil in a medium-high heat in a wok, caramelizing onion
  2. Add the rice and break it down
  3. Add finely chopped veggies and protein, which should be cooked in a separate pan or wok
  4. Add the eggs, drizzle over the rice mixture, and santee again to mix evenly
  5. Season with soy sauce plus other optional seasonings such as sesame oil or kimchee
  6. Sprinkle fresh chopped scallion on top and serve

Notes

  • The texture of the rice improves if it is cooked and refrigerated overnight, as water evaporated
  • A BIG wok and a spatula are necessary tools
