Pumpkin Cake Recipe (Pancake) (Soft, Sweet & Chewy)

Ingredients
- (Sweet) Pumpkin
- Glutinous rice flour / Or just flour
- White sugar
- (Optional) Breadcrumbs and a little bit of love
Instruction
- Prepare the pumpkin by peeling, removing seeds, and cutting it into small pieces
- Steam the pumpkin until it is completely soft (microwaving or baking also works)
- While warm, mash the pumpkin into a smooth puree. Add sugar, and stir until dissolved
- Wait for the puree to cool slightly, add the flour, and mix until it forms a soft, non-sticky dough, then shape it.
- Pan-fry over **LOW HEAT** with a thin layer of oil until each side turns golden brown
- Ready to eat!
