Pumpkin Cake Recipe (Pancake) (Soft, Sweet & Chewy)

Ingredients

  • (Sweet) Pumpkin
  • Glutinous rice flour / Or just flour
  • White sugar
  • (Optional) Breadcrumbs and a little bit of love

Instruction

  1. Prepare the pumpkin by peeling, removing seeds, and cutting it into small pieces
  2. Steam the pumpkin until it is completely soft (microwaving or baking also works)
  3. While warm, mash the pumpkin into a smooth puree. Add sugar, and stir until dissolved
  4. Wait for the puree to cool slightly, add the flour, and mix until it forms a soft, non-sticky dough, then shape it.
  5. Pan-fry over **LOW HEAT** with a thin layer of oil until each side turns golden brown
  6. Ready to eat!
