Double-skinned Milk

Ingredients
- 500ml milk
- 3 big eggs (using **only the egg white**)
- Sugar (as you like)
Instruction
- Heat the milk until **little bubbles** appear at the edge. Pour the heated milk into a bowl and wait for the **skin** to form
- Mix the egg white and sugar
- Use a **toothpick** to separate the skin. Pour the milk into the egg white mixture
- Filter the mixture, pour it back into the bowl, and **steam for 10 minutes**, when you plug the toothpick, it won't fall, and the dessert should be ready

This is noted as a traditional dessert in Fujian.
